Bittering – HopAlpha

Alpha Acids occur naturally in hops and provide the bitterness character.  We can provide alpha acids with improved utilisation (through isomerisation) and standardised to a specific iso alpha acid content.  Accordingly you can dose the bitterness of your beer with greater accuracy.

HopAlpha™ Extract

CO² extract of hops in which the α-acids are standardised to 300g of alpha per can.  Will retain full hop character but has no hop waste associated.

HopAlpha™ IKE (Isomerised Kettle Extract)

IKE is a viscous CO² extract of hops in which the α-acids have been isomerised.  This allows the acids to be soluble and improves their utilisation.  IKE contains all of the extract components including beta acids and hop oils.  As such it is normally used as a replacement for normal or late added kettle additions.  All properties are similar to conventional CO² extract but the utilisation of iso-α-acids is significantly higher.

IKE is added direct to the brew kettle with typical dose rates 0.3-0.4 grams/HL per IBU

HopAlpha Iso 30%

Iso-α-acids are formed naturally in conventional brewing during kettle boiling.  HopAlphaTM Iso 30% is produced from CO² hop extract and used to replace bittering hops in the kettle.  It is added post fermentation and provides a standardised solution of readily soluble bittering.  It is classified by the US FDA as a modified hop extract under regulation 21CFR 172.560(b) (2-5).

Typical dosing is made post fermentation at rates of 0.4-0.5 grams/HL per IBU

HopAlphaRho 30%

HopAlpha™ Rho is an aqueous solution of the potassium salts of rho-iso-α-acids.  It is produced from CO² hop extract via an isomerisation then reduction process.  This gives a soluble standardised solution of reduced (rho) iso-α-acids, which provides the brewer with a soft perceived bittering.  The main benefit of rho is light stability, allowing beer to be packed in clear glass bottles.  It is classified by the US FDA as a modified hop extract under regulation 21CFR 172.560 (b) (1).

Typical dosing is made post fermentation at rates of 0.4-0.5 grams/HL per IBU

HopAlpha™ Tetra 10%

HopAlphaTM Tetra 10% is an amber coloured, aqueous solution of the salts of tetrahydroiso-α acids produced from CO² hop extract.  Tetra enhances beer foam whilst providing light stability when used in the absence of normal α and iso-α-acids.  It is classified by the US FDA as a modified hop extract under regulation 21 CFR 172.560 (b) (6).

Tetra is added post fermentation at rates of 1.25 grams/HL per IBU
